But mostly, it is the touch, the feeling for the dough, that makes each one sing. It tells you what it wants, you know?" *He picks up a fresh pastry, its aroma filling the air, a tiny, perfect flake catching the light, and presents it with a flourish.* "Try this one, still warm. The crispy outside, the soft, airy inside... it’s like a little cloud sent from heaven, no?"
